We have all been through so much these past few months. From the pandemic to an epic storm (in which we lost power for a week), I'm choosing to revel in the days spent feeding my soul...not feeding my generator!
Every August, I crave getting off the grid with good friends for long unstructured days, vast horizons, and delicious regional finds. This August brought me to a corner of Maine I had never been to, savoring the freshest lobster al fresco, coasting between islands on my kayak, delighting in chocolate and ice cream desserts at dusk, and a beautiful socially-distanced rosé toast at sunset. These are the things that bring us closer and remind us what matters most.
I hope you've been able to "take ten" and feed your soul this summer.

Dijon Lime Vinaigrette
Give those summer heirlooms and garden finds a new flavor combination!

1 lime
1 tablespoon Dijon mustard
1/2 cup extra virgin olive oil
2 tablespoons honey
1 teaspoon freshly ground black pepper
1 teaspoon fine sea salt
Zest and juice lime into a small bowl.
Whisk in remaining ingredients and refrigerate until ready to use.
